What is Terlingua Restaurant and Market? Terlingua is a neighborhood restaurant serving Texas-style BBQ and South of the Border influenced dishes with a New England flare. Our bar program is focused on Agave based spirits and we feature an extensive selection of the best mezcal, tequila and sotol available in Maine.The Terlingua Marketis an outpost for house-made provisions as well as an extensive hot sauce collection. The market is also the hub for our to-go operations. Guests will enjoy stopping through the market on their way in or out to browse local provisions and dry goods including Terlingua merchandise and handmade bags imported from Mexico. Our restaurant offers a single, all day, menu - the only thing that changes between lunch & dinner is the specials that are thoughtfully developed daily by our kitchen team. Guests will enjoy indoor and outdoor dining year round or Terlingua to-go by ordering online or in the market. Depending on the season and time of year our take-out menu is sometimes limited to exclude BBQ in order to save it for guests dining in-house. We strive to use the freshest ingredients and work with local farmers and vendors as much as possible. All of our menu item including: soups, chilis, salsas, enchiladas, sauces, tortilla chips etc. are made from scratch by our dedicated prep team and talented line crew.

_Back of House Operations Leader: In this role, you have the skills to understand what is needed to keep systems organized and maintained in a fast-paced, dynamic and fun workplace! At Terlingua, we manage: Two separate kitchens each with their own sanitizing stations and dishwashers. During the season we have thousands of people who are coming in and out of our property. We take pride in our recycling, renewables and compost program that takes work and engagement to maintain. If you do not know what we are known for? It is our BBQ! Our custom-built smoker is lit daily and uses wood to cook our famous briskets and smoked meats. We often get “drops” of beautifully dried, kilned wood that needs to be managed by using a wheelbarrow and stacking orderly year round.

Along with this- We have paper and dry goods that arrive and need to be organized and put away in an orderly fashion a few times a week.

This position will report directly to our Chef and Owner!

We strive to embody that no matter what role you are working at Terlingua you are part of a team and that we all make sure we have a safe and healthy workplace that is supported. In this role, you are taking on a leadership role to help our dish stations run smoothly. You are someone who can provide positive reinforcement and clear direction when needed. You have eyes at what needs to be done without being told. You help new dishwashers be trained and you are a mentor to those looking for a leader to help guide them.
Specific roles and responsibilities will include:

Dish Team Lead:
- Training of new dish staff

- Communicating directly with our chef, Wilson, about scheduling needs in the dish department

- Overseeing dish operations that include soaps and sanitizing solutions refill

- Acting as a dishwasher 2-3 nights and 2-3 days a week and available for support in this role when there is a need.

Alleway Management:
- Compost bin organizing and maintaining orderliness
- Recycling bin organizing and maintaining orderliness
- Trash bin organizing and maintaining orderliness
- Returnable bins organization

- Scheduling deep cleans of the alleyway and communicating additional maintenance and needs in the moment

Dry Storage Organization:
- Putting away dry storage when onsite and/or helping to communicate and help with the need of organizing our dry storage

- Breaking down boxes and cardboard efficiently and recycling appropriately

Schedule Requirements: Like any service industry-based business in Portland, Maine, our operations fluctuate seasonally. By being hired in this role, you are agreeing to understand that during the months of May-October, we gear up and work together to ensure the busy season is running smoothly. As a leader, you are expected to work weekends and over holiday periods of time. This position for the right person can be an excellent way to use your leadership passion to grow within a family-owned business.

Schedule: 2-3 nights and 2-3 days. The schedule could very well look like:

Sunday: Noon-8PM
Monday: OFF
Tuesday: OFF
Wednesday: 11-7PM
Thursday: 11-7PM
Friday: 4-Close
Saturday 4-Close

Compensation Package:

Hourly Rate Based on Experience: Competitive hourly rate - Guaranteed 35-40-hours a week.
Accrued Paid Sick Leave: After 30 worked hours, you are entitled to 40 hours of sick time per year.
Accrued Paid Time Off: Entitled to PTO after six months of employment. Eligible for one-week of PTO per year at your hourly rate of pay. PTO may be redeemed upon completion of six consecutive months of employment at Terlingua.

Health Care Stipend: Qualify for up to $3000/year, processed monthly with valid proof of invoice or premium payments.

Employee Discounts: Employees receive 50% off their individual check when dining in. If they are dining with other guests the discount is only applied to items that the employee consumes to include shared items. Other discounts available in our Market.
